Need a salad in a pinch?

I always seem to forget about washing the lettuce until right before I'm about to make a salad.  So when there is no time to wash the lettuce and wait for it to drain, I make this  easy cucumber tomato salad with homemade Italian dressing.  This salad also makes good leftovers.  The longer the vegetables sit in the dressing the better it is.

For the salad
3 cucumbers peeled and cut into chunks
4 roma  tomatoes cut into chunks

For the dressing
2 oz. red wine vinegar
4 oz extra virgin olive oil
1 tsp. garlic powder
1/2 tsp onion powder
1 tsp dried parsley
1 tsp dried basil
1 tsp dried oregano
salt and pepper to taste

combine all ingredients in a Salad Dressing Mixer.   Pour desired amount on salad and store the rest in the refrigerator.
